My ten gallon planted has been growing crazily lately, everything is very green, very lush, and very healthy. My only question is that my melon sword, front and center has been trying to outgrow the tank, sending out very, very long leaves every so often. The very long ones tend to stick out of the water and rot away pretty quickly. The other leaves are red or green and very healthy, not a single sign of deficiency. Should I be changing anything? (other than the size of the tank, obviously )

I would prune those long leaves at the base every time you see them to try to encourage compact growth. I don't know for sure if that works on swords, but it does on tiger lotus and a lot of other plants. Most aquatic plants are known to have several growth forms, each of which tend to dominate in different conditions. You can sometimes train plants like that to grow the way you want to some degree.

All of the named sword plants have different kinds of growth -- I've got what was supposed to an Ocelot that is growing out of my 120 with the jurupari in it. They really want to have some emersed leaves, and if you can leave a couple of them it won't hurt the plant.
